Spaghetti carbonara with chicken breasts (94g of protein)

Ingredients:

  • Spaghetti – 200 g
  • Bacon – 80 g
  • Parmesan cheese – 50–70 g
  • Egg yolks – 3 pcs
  • Chicken breast – 150 g
  • Butter – 10–15 g

Instructions:

  1. Prepare three small bowls: one with 50–70 g of Parmesan (I used 70 g), one with 80 g of bacon cut into small cubes, and one with 3 egg yolks (pic 1).
  2. Cook 200 g of spaghetti in boiling water according to the package instructions. Keep some of the pasta water aside — you'll need it later.
  3. Mix the egg yolks with Parmesan, add pepper and a pinch of salt (pic 2). Stir well and add about half a ladle of pasta water to help combine the mixture.
  4. Heat some butter in a pan and add the diced bacon (pic 3). Leave it in the pan until the pieces are really crispy.
  5. Now it's time to bring everything together (egg yolk-Parmesan mixture, pasta water, cooked spaghetti, and crispy bacon). Add the spaghetti to the pan with bacon, pour in the egg-Parmesan mixture, and stir well. Add another ladle of pasta water if needed to make the sauce creamier (pic 4).
  6. In a separate pan, heat a bit of butter and cook the chicken breast. Don't forget to season it beforehand to your taste (pic 5).
  7. And finally… serve! Place a portion of spaghetti in a deep plate, add the chicken breast on top, and grate some more Parmesan over everything (pic 6).

This amount is suitable for 2 regular or 3 smaller portions.

I made the spaghetti for dinner and it was great, but due to the high amount of carbs I'd recommend it more as a lunch before training.

Would I cook it again? Definitely yes, but I'd add 1 extra egg yolk, more Parmesan, and pour in a bit more pasta water so the spaghetti sticks less and the flavor becomes smoother.

Overall, the dish was really good and I can only recommend it.

Can this meal be stored and used for meal prep? Absolutely. You can portion the spaghetti with meat into several containers and store them in the fridge. Later, just reheat in the microwave and you'll have meals ready for work, on the go, etc. Of course, spaghetti will taste best when fresh and still warm.
